A whole chicken from a good butcher is a different thing entirely. Ours are sourced fresh, never frozen, with a clean flavour and firm texture that holds up beautifully whether you're roasting, grilling, or slow-cooking. The kind of bird that fills the house with the smell of something good.

Cooking Methods

  • Oven Roast — rub with butter, lemon, and herbs. Roast at 190°C for 1h 20min per 1.5kg
  • Spatchcock Grill — flatten, marinate, grill on indirect heat for 45–60 min
  • Slow Cooker — season and cook on low for 6–8 hours for fall-off-the-bone tenderness
  • Lemon & Oregano Greek Style — marinate in lemon, olive oil, and dried oregano overnight, roast until golden

Butcher's tip: Let the chicken come to room temperature for 30 minutes before roasting and always rest it for 15 minutes after — the juices redistribute and every slice stays moist.
